Every holiday season, we reach for familiar spices because they feel comforting and nostalgic, but rarely do we stop to ask what they’re actually doing in the body. As a Doctor of Clinical Nutrition specializing in root-cause, evidence-based care, I focus on connecting traditional foods with modern biochemical pathways, especially when it comes to immune resilience and liver health. One of the most common mistakes I see is assuming that “natural” means mild or insignificant, when in reality some of our most powerful supportive compounds come from foods we’ve used for centuries. Star anise is one of those quietly powerful examples.
Before we break down exactly how star anise supports immunity and liver function, let’s look at what the science actually shows, and how to use it with intention.
Don’t Confuse “Holiday Flavor” With Harmless Decoration

Star anise isn’t just there to make your tea or mulled drinks smell festive. It is there because it does something in the body. This star-shaped spice contains bioactive compounds that actively modulate inflammation, oxidative stress, and microbial balance, which is exactly why it has been used traditionally during winter and illness-prone seasons. The mistake most people make is treating star anise as a passive garnish, when in reality it interacts with immune signaling, liver detox pathways, and even metabolic processes through its dominant compound, anethole. When used intentionally, it becomes a functional tool, not just a flavor.
Once you understand why star anise shows up in traditional winter remedies across cultures, its role in immune and liver support starts to make a lot more sense.
Follow the Evidence: Star Anise Works Through Multiple Pathways

Star anise isn’t a vague “immune booster.” Its benefits are mechanistic and measurable. Research shows that Illicium verum extracts inhibit protein glycation and the formation of AGEs (advanced glycation end products, damaging compounds formed when excess sugar binds to proteins and fats), processes closely linked to inflammation, oxidative stress, metabolic dysfunction, and liver burden. In diabetic models, star anise supplementation reduced AGE accumulation in tissues while also improving blood glucose regulation, lipid profiles, and liver enzymes effects, that become especially relevant during high-sugar periods like the holidays.
Its dominant compound, trans-anethole, further supports immune balance by suppressing NF-κB–driven inflammatory signaling and reducing pro-inflammatory mediators such as TNF-α and nitric oxide. Beyond inflammation, trans-anethole has demonstrated metabolic effects in obesity models, where it activated AMPK–SIRT1 pathways, improved mitochondrial function, and promoted healthier fat metabolism through increased fat oxidation and reduced lipid accumulation. These mechanisms directly support liver health and systemic metabolic resilience.
Star anise also shows antiviral relevance. It is a natural source of shikimic acid, a key precursor used in the pharmaceutical production of oseltamivir (Tamiflu®), which helps explain its long-standing use during viral seasons. While culinary use does not replicate drug-level antiviral effects, this biochemical relevance reinforces why star anise consistently appears in traditional winter remedies.
In addition, star anise demonstrates oral-health relevance. Research shows that formulations using star anise extracts exhibit strong antibacterial activity against Streptococcus mutans, the primary bacteria involved in dental caries formation. While this does not mean that drinking star anise tea prevents cavities, it highlights its potential role in oral microbiome modulation when used in targeted applications.
When you understand how star anise works, from glycation control and inflammatory signaling to metabolic, antiviral, and microbial balance, you can use it intentionally, not just seasonally.
How I Actually Use Star Anise

In my own kitchen and clinical work, star anise is one of the spices I reach for most during the colder months, not because it’s trendy, but because it aligns with what I see in practice. Many of the people I work with struggle with inflammation, metabolic stress, blood sugar swings, or liver overload, especially around the holidays when routines change and sugar intake increases. Instead of eliminating every comfort, I focus on layering in foods that quietly support the body’s stress response.
At home, I use star anise in warming teas, broths, and slow-simmered dishes, not as a treatment, but as a gentle, consistent way to support digestion, immune resilience, and metabolic balance. Clinically, I view it the same way: as part of a broader, root-cause strategy that respects tradition while being grounded in biochemistry. It’s a reminder that supporting health doesn’t always require extremes, sometimes it’s about using familiar ingredients with intention and understanding why they belong there.

Using star anise safely starts with sourcing the right plant. Always choose Illicium verum, commonly labeled as Chinese or Vietnamese star anise, and look for certified, reputable suppliers. This is important because Japanese star anise (Illicium anisatum) looks similar but is toxic and not meant for consumption. Once sourced correctly, simplicity matters. For a tea, one to two whole pods are plenty, gently simmered for 15–20 minutes with citrus peels or warming spices as part of a calming evening ritual. For broths or soups, a single pod added during cooking infuses flavor and functional support without overpowering the dish. The goal isn’t intensity or excess, but consistency and intention, using small amounts, seasonally, in ways that fit naturally into daily routines.
Zoom Out and Think Long-Term

Lastly, remember that real health support is rarely about one ingredient. It is about patterns. Star anise works best when it’s part of a broader, intentional approach to nourishment that supports immunity, liver function, and metabolic balance over time, not as a quick fix during cold season. Understanding why certain foods and spices matter allows you to build rituals and habits that actually move the needle on health.
